Creamy Cilantro Lime Dipping Sauce

This sauce is good enough to drink through a straw.   Go ahead, I won’t judge.  Seriously, the possibilities of what to drizzle this on or dip in it are endless.  I first made it to go along with my Burmese Samosas.  It was divine.  I then made my Mexican Pulled Pork Tacos and drizzled it on those.  OH.MY.GOD — absolutely positively the best cilantro sauce ever.   It couldn’t be easier and the ingredients are probably on hand (well, maybe not the Cilantro, but nothing a quick trip to the grocery can’t cure) — Enjoy!

1 ½ cups packed cilantro leaves and small stems
Juice of 2 limes
1 cup good mayo (I use Dukes)
1 cup non-fat plain Greek yogurt
1 Tbsp extra virgin olive oil
salt to taste

Put all ingredients in a blender and blend until smooth, scraping down the sides as needed.  Season to taste.  It’s that easy!
