Herbed Cauliflower Puree

This is a great healthy alternative to mashed potatoes.  Like potatoes, the variations are endless.  Be creative and adventuresome by adding your own personal touch of your favorite ingredients.  (Hint:  Every dish deserves garlic – roasted garlic!)

Ingredients
Fresh or Frozen Cauliflower (about 3 cups florets)
1/2 Cup half & half or heavy cream
1 Tbsp Butter
Fresh herbs of choice (Thyme, Rosemary, Parsley)

Preparation
Steam cauliflower for 10-12 minutes, until fork tender.  Place in large bowl of food processor with fresh herbs, butter and half & half or heavy cream.  Puree to desired consistency.  The smoother the better.
