Girl Scout Thin Mint Cookie Imposter
The cookies can be stored at room temperature in an airtight container for several days. If you’re like every other red-blooded American addicted to these minty delights, keep them in the freezer. They will last for weeks – if you keep them around that long.
Makes 3 dozen
What you’ll need:
36 Ritz Crackers
1 tsp peppermint extract
2 cups semi sweet chocolate morsels
1 1/2 tbsp Crisco vegetable shortening
Line a cookie sheet(s) with parchment paper
In a microwavable dish, melt chocolate and vegetable shortening until smooth.
(The shortening gives the chocolate that shiny creamy texture and keeps it from hardening and clumping while dipping)
Stir in 1 tsp peppermint extract. (Since all extracts are different, you may need a little less, a little more) Start with small amount and add until you get desired taste)
Using a fork, set cracker on tines and dip in chocolate until fully coated. Hold over bowl to allow excess chocolate to drip off. Place on cookie sheet.
Place cookie sheet in freezer for 30 minutes until set.
Place in airtight container and store at room temp, the fridge, or freezer.
