This dish definitely gets its flavor punch from the unexpected barbecue sauce ingredient.
4 Chicken Breasts, cut in half horizontally
Kosher Salt & Ground Black Pepper
Real bacon bits or fresh bacon chopped
1 cup barbecue sauce (Sweet Baby Rays Original is great!)
Shredded pepper jack cheese
3 green onions sliced think on the diagonal
1 can diced tomato with green chiles drained
Preheat oven to 400 degrees.
Brush each breast piece front and back with olive oil, then salt & pepper. Heat a grill pan over medium high heat. Grill each breast until browned and cooked through.
Place the breasts on a large cooking sheet/jelly roll pan. Spoon 1 tbsp barbecue sauce on each piece. Top with 2 tbsp tomatoes, sprinkle with green onion and pepper jack cheese and bacon bits.
Place in oven under broiler until cheese is melted and beginning to brown.
