BLACKENED GRILLED SALMON OVER CILANTRO LIME QUINOA
For the blackening seasoning
½ tsp paprika
¼ tsp salt
¼ tsp pepper
¼ tsp cayenne pepper
¼ tsp onion powder
¼ tsp cumin
1 tsp Olive Oil
2 cups chicken broth (fat-free/low sodium)
1 cup uncooked quinoa (click HERE for the perfect quinoa cooking tips)
Juice & zest of one lime
1 cup cored and chopped tomato
2 TBSP chopped cilantro
Salt & Pepper to taste
Combine the blackening seasoning in small bowl and season the salmon with it.
Brush a grill pan with olive oil and add salmon skin side up to pan. Grill to half done (approx.. 6-7 minutes) flip and cook until done (another 5 minutes or so.)
Toss the warm quinoa with lime zest, lime juice, tomato, salt & pepper, and cilantro.
Serve salmon atop quinoa and serve with fresh steamed veggies.
