This is a great casserole to whip up for overnight guests. You can make night before and just pop in oven the next morning.
I got this recipe from a friend who made it for a girls’ weekend getaway. I’ve played around with it some to try to make it a little more figure friendly. The possibilities are limitless.
2 cups Frozen Shredded Potatoes
1 cup Triple Cheddar w/Philadelphia Cream Cheese
1 cup Jimmy Dean Crumbled Turkey Sausage
1 cup 2% milk
1/2 tsp dry mustard
1/2 tsp salt
Spray a 9×9 baking dish with Pam or Non-stick cooking spray
Place the potatoes in an even layer
Top with the cheese and sausage
Mix eggs, milk, mustard & salt together and pour evenly over top
Cover and bake 1 hour at 350 degrees. Remove cover and bake 15 minutes more or until edges are browned.
*If preparing night before. Allow extra baking time.
