Roasted Kale Chips

So what’s the buzz about Kale?  Every single cooking magazine or cooking show I see has got some kale recipe in it.  I’ve seen many for kale chips, so I decided to see what the big deal was.  O-M-G!  Can I just say that this is my new crunchy treat!  For those on WW, this is virtually a zero point food!  So crunch all you want!


Bag of chopped kale
TBSP Olive Oil
Salt to taste
Chili Pepper Flakes to taste


Preheat oven to 375 degrees.  On a jelly roll pan/cookie sheet, toss couple handfuls of kale with olive oil, sprinkle with salt.  Shake pan so that kale is all one layer.  Bake until crispy – about 15 minutes (turning about half way through).
